Ground Beef and Whatever Hash Recipe

I wanted to thank you for all the encouragements and nice comments on my last post! Seriously I am so happy to know I can encourage some of you out there to start eating healthier, after all that is the goal of a blogger, to inspire others.
Some of you asked for recipes and food ideas. I do have many Paleo cookbooks, however on days like yesterday where Josiah is fussy (he is teething), and Abram and Eli are being needy, I have what I call a "throw stuff together" kind of recipe. Most of the time I have all of these items on hand, and if I don't have one of these I can omit that item and it will still taste pretty much the same. I call this my.....
"Ground Beef and Whatever Hash" 
Funny name, I know, but this recipe is so versatile that you can add whatever veggies to it and will probably still be great! Haha.



What you need:
-1 lb ground beef
-1 small- medium sweet potato cut into small cubes
-1/2 small yellow onion
-1 garlic clove
-1/2 red/ green bell pepper sliced
-1 celery stick cut into small pieces
-1 tablespoon salt/ seasoning salt/ garlic salt
-1 teaspoon of pepper
-1/2 teaspoon of dried parsley
-1/4 teaspoon paprika
-1/4 teaspoon cumin
-4 oz of tomato sauce (optional)

What to do:
1.Brown ground beef over medium heat adding onion and garlic. (mince garlic or cut in half, but don't forget to fish it out later if you prefer not to bite into it.) Do not drain out grease.
2. Add sweet potato, celery, and seasonings. Mix well and cover for 10 min.
3. Add tomato sauce, mix and cover for another 5-10 min depending how hard you like your potato.
4. Serve and enjoy!

I usually add 1 zucchini squash sliced and 1 carrot shaved with the potato peeler,  but I was out of those items this time. Also very yummy!
