One more Recipe and Josiah Update

I am definitely not a food expert, but I was glad to receive positive feedback and requests for more recipes. Yesterday I took a trip to Farmers Market and stocked up on so many delicious and fresh veggies! I am determined to eat at least one vegetable every meal! Carrots are the boys favorite, but I'm trying to get them to branch out a bit! Last night I made Chicken, sweet potato spuds and sauteed swiss chard. We had never tried swiss chard, but I must say it was pretty good! Luis loved it and said I need to make it more often, so that made me pretty happy! It's scary trying new foods because I have such a picky bunch, but I'm glad if at least 1 person likes it. 


Today I made a green scramble for breakfast. It was just Eli and I because Abram is at school and Luis got home so tired he just went to bed, but it was great!

Saute bacon, cut into small pieces (I use kitchen sheers). Cook about 5 min on medium heat, stirring so it doesn't burn. Add cut up asparagus and continue cooking until asparagus has softened a bit. Add a handful of spinach and 3 baby heirloom tomatoes cut into 4 pieces each. Sautee the mix until the veggies are as soft as you want them. Add 4 eggs.

Mix until done cooking and......

  Voila!!! Easy and healthy breakfast is ready!
Eli ate most of it, so that was an achievement! Keep trying parents, if kids see veggies on their plates every time they will eventually give into eating them! If that doesn't work sneak them into their smoothies! Haha!
