What I Eat (Recipe Included!)

A few days ago my mom asked what I was doing to lose weight. It made me feel real special because my mom is a very hard person to impress! She doesn't give out compliments on a daily basis, in fact it's pretty rare. She will tell you you're fat if you're fat, she just does not sugar coat anything. Now this doesn't mean that she's a bad mom or a bad person, she is just pretty much a blunt lady! So if she points out that you look good or in my case I've lost weight, it's a HUGE deal! I grinned from ear to ear and I thought "Wow, I'm getting there, the weight is really coming off!"  Anywho, I told her I was back on my Paleo Diet. I went into detail of what I ate and didn't eat and she said she was going to give it a try, since she is currently experiencing some health problems herself.
To date I've lost 12 lbs with some cheat days here and there do to family gatherings or traveling without bringing extra food. I feel good, but I am still a good 15 lbs away from my goal weight. So today I wanted to share a recipe and a few of the snacks I eat! 







My mom used to make this for us when we were kids so I guess its considered a Honduran recipe. Its called Tortitas de carne, and its delicious. In a nutshell its ground beef patties with tomato sauce. Its one of my go to meals when I'm in a hurry because it's easy, fast and yummy. I love it with steamed broccoli, although my mom normally served  it with white rice. Being paleo I just eat mine with broccoli- but for the boys and Luis I serve it with the rice.
-Recipe-
You start with a pound of ground beef. In a medium sized mixing bowl season the meat with garlic salt and pepper. (I use Lawry's garlic salt as much or as little as you want. Sorry I never measure.) Mix it really well with your hands. Take a small chunk out of the meat and roll it in your hand making about a 2 inch meatball. Flatten the meatball in your hands, without leaving it too flat. I usually get about 8 patties. Spread the patties around a frying pan that gives you enough room to add sauce and veggies.
Add as much bell pepper (my favorite), onion, tomato and garlic as you want, to add flavor. Let the patties cook on one side for about 10 min, and then flip them to cook for another 10 min on medium heat. Once both sides of the patty are browned add 3/4 of a 15oz can of tomato sauce, I prefer Hunts, and 1/2 a cup of water. Cover and let it simmer for another 10 min, stirring the veggies and sauce and flipping the patties one more time in between. If you are trying the paleo way serve a top of your choice of veggies, but broccoli really is the best with extra sauce on top! But if you eat normal it tastes awesome with rice and mexican cheese (queso fresco) sprinkled on top! The boys and Luis love this and normally Eli will ask for seconds!

Some of the snacks I eat:
  • Apples, Celery, or Bananas with Sunbutter
  •  Salt & Pepper Pistachios, about 2 handfuls
  • Lettuce wrapped cold cuts with a side of carrots
  • Fruit salad: grapes, strawberries, banana, apples and blackberries

These are just some of the quickest snacks I can get my hands on right now with my schedule being so hectic, but there are so many other things you can whip up in advance for when you feel like munching. Leave me a comment and let me know if you would like some of those ideas and recipes.
